This seven-inch santoku knife combines the precision of a Western chef’s knife and the power of a Chinese cleaver. It’s an essential in most Japanese homes as well as many professional kitchens. Great for chopping and dicing herbs or vegetables, the broad, straight blade also produces razor-thin and precise slices of sashimi, or any other fish, meat, or poultry. Fine addition to my knife set
I have several Calphalon knives, and this was my first Chicago Cutlery knife. I'd been wanting a Santoku, and Amazon was offering this one on sale, so I went for it. I'm very pleased -- the balance is nice, and it's lightweight. I would definitely consider another knife from this manufacturer.
Chicago "Forum" santuko knife
Very attractive appearance. Not particularly sharp right out of the box, but sharpens beautifully, and once sharpened handles/cuts almost as well as a similar knife from a top of the line name brand that cost almost six times as much on sale. Considering the price a much better value, and one does not have to be especially protective of it because it is not a major investment. I do put mine into the dishwasher with no adverse effect noticed, so long as I give it a few swipes on the sharpener every few uses.
