This pizza crisper by Chicago Metallic features lots of evenly spaced holes, which means--you guessed it--that your pizza will be evenly crisped. I have one similar to this.I needed two so I bought this one. The difference is this one is darker so therefore, instead of cooking my pizza at the usual 450 degrees, i put the oven on at 375 degrees. The bottom turns out crispy and the top is lightly crunchy and chewy. Definitely non stick. I have no complaints with the dough seeping through the holes while the dough is rising. I highly recommend this pan. It really makes a great pizza.
Great Crispy Crust
This does a great job at evenly cooking your pizza. Also the crust comes out totally crispy, I call it my "cardboard pizza".
What the heck?
I got this as a gift from Crate & Barrel and when I went to use it, I realized the holes on this tray are completely exposed. This might work ok if you're baking a *whole* pizza that has no chance of spilling/oozing over. It's definitely terrible for reheating pizza slices, as there is nothing to prevent the melted cheese from going through the pan and onto your oven. YUCK!
