Professional pizza and traditional European bread ovens are often lined with stone or brick. This is so heat is stored up and redistributed evenly. The resulting blast of heat from the Old Stone Oven rectangular pizza stone gives bread and pizza a nice chewy crust. The rustic French tarts called galettes are also well suited to a baking stone. To use the stone, place it in a cold oven and preheat to 500 degrees for pizza, or according to the recipe for bread or galettes. The stone is made of the same material that lines blast furnaces and kilns, so it can handle ultra-high temperatures.
Wait until the baking stone is entirely cooled before attempting to clean it. Let it dry completely before using again. Some discoloration will occur over time; this is natural and will not affect baking. Using baking parchment may help delay that discoloration. Do not bake cookies, turnovers or other high-fat items on the stone; the stone would absorb the fat and proceed to produce smoke and bad odors. Senseless packaging...
Please note that I cannot comment on the quality of the stone since it never reached me in one piece. When the first one arrived broken Amazon sent a replacement, which was even more broken. It did not come in the usual Amazon box with bubble wraps. So I'm assuming that it came from the vendor directly since I've never had any complaints with Amazon service. Also when I made the purchase it was being offered for $20. At the current price I'm sure you will get a better deal in the future or somewhere else. If you do order it and it comes broken, don't bother asking for a replacement. Just do yourself a favor and request a refund.
great baking stone
This is a great baking stone. I'm fairly new to bread baking on a regular basis, but following Julia Child's french bread recipe with this stone, turns out so well! The first stone I received was broken on arrival, but the replacement process was easy and fast. I keep the stone in the oven at all times, and so far, no problems. I would recommend this stone for someone who will bake frequently. Next, pizza! I'm having great fun!
Thicker and big enough for 3 or 4 naan
Good stone - This is a half inch thick throughout with some even thicker "feet" in its mold also. I'm happy with the size, thickness and results. It arrived in one piece even though the temps outside were below zero fahrenheit - I was a bit worried it would have cracked due to some other reviews. I let it sit in the box overnight, at least a good eight hours, maybe twelve, so it could warm up and then I used it. I can get 3 or 4 naan or pita on it at one time and 2 personal size pizzas. Make sure you preheat your oven to 500 degrees F to get a crisp crust on pizza.
