Once available only to commercial kitchens, the pan is made of professional-weight aluminized steel, so it won't buckle or bend under intense heat and consistently provides fast and even heat distribution. Muffins brown quickly and evenly--there's no need to turn the sheet midway through baking. Bakers new to aluminized steel should pay extra attention at first, since this heavy-gauge pan bakes muffins more quickly than lighter-gauge varieties. The pan gradually darkens with use, which actually improves heat retention, but it may also require that oven temperatures are lowered by 25 degrees to ensure even browning. The traditional uncoated surface of this sheet makes it extra rugged and a great conductor of heat, but butter, oil, or parchment paper should be used to prevent foods from sticking. Greasing or lining the pan simplifies cleanup, since the pan will go from oven to dishwasher with no scrubbing in between. Heavy duty pan5
In the usual Chicago Metallic style, this pan is very well built. Heavy, durable, won't warp in the oven. Yes, it costs more than the cheap ones, but this will perform much better and will last for a very long time. Once you use well-made tools, you'll not want to use anything else!

A keeper!5
This is an excellent muffin tin. Very heavy and durable with great performance. If you're used to the cheap, thin, non-stick muffin pans, prepare for a different experience! Everything I make comes out evenly baked and nicely golden without excessive browning, but it did take a few batches to learn how the thickness of the batter and the fullness of the cup affect the final product. The pan gets hot and retains its heat, so keep those pot holders handy.

Non-stick spray works great, and if anything is stuck I just soak it for a few minutes. Nice to not have to worry about abusing it - it is a solid piece of steel! I expect to be using this forever.

Delightful muffin pan!5
Delightful muffin pan! Take your usual 12-cup standard muffin batter and pour it into one of these Chicago Metallic 6-cup Crown Muffin Pans. You get beautiful, mushroom-shaped muffns if your batter reaches to near the top or at the top. They come out very easily. I haven't used a batter that fills the cups less full, yet. Hopefully, they'll rise high enough to get the shape, too.
