About the Author
Chef and world-traveler, Yvonne Stephens, graduate of the Art Institute of Philadelphia in Culinary Science, was born in the Netherlands, and as a true Dutch woman, traveled all over the world; to Latin America, Asia, Hawaii, the Caribbean, and most countries in Europe.

Yvonne knows that losing weight is a frustrating problem for people, and keeping it off is even worse. She conquered the eating disorder bulimia and has tried every diet possible, even the "prison diet": bread and water. She has been yo-yoing—losing and gaining weight—for years, so she has learned the real reason why diets do not work: you are starving your body for something "needed." Most diets tell you to cut out nutrients, which your body needs, and this creates cravings.

As a former fitness instructor, she learned that an active lifestyle combined with healthy eating is the only way to lose weight, and keep it off. Healthy eating doesn’t mean that you have to eat like a rabbit, or eliminate bread, rice and pasta for the rest of your life.

Yvonne Stephens has written a remarkable book that is just full of healthy and useful information. Included are more than 100 recipes which can be ready in less than seven minutes cooking time, and all the recipes are healthy and geared toward weight loss. Stephens has combined flavor combinations from around the world, as she is a world traveler and chef, and offers easy step-by-step guidelines and instructions to prepare the dishes.

"Amazing 7 Minute Meals" teaches the reader how to cook delicious, healthy meals quickly using the stir-fry technique. Stephens' philosophy is to eat all six nutrients while educating the reader about herbs, spices, hard and soft vegetables, and about the benefits of fresh wholesome food. The stir-fry method results in recipes that are cooked quickly which results in better taste and less destruction of nutrients, and slower digestion. Therefore, one should have fewer cravings, more balance of blood sugar levels, lower risks of cardiovascular diseases, and a healthy way to lose weight. Colorful pictures and step by step instructions make the learning easy and fun.

Author Stephens shows that eating healthy is much faster, easier and cheaper than one might initially think. Lack of time is a primary reason people will eat fast food or a frozen meal. Unfortunately, these are loaded with chemical preservatives, enriched flour and transfats. The good news is that lots of time need not be spent in the kitchen to prepare a tasty and nutritious meal. And all of the recipes included are quick and easy while appropriate for health conscious busy families, college students or young professionals.

"Amazing 7 Minute Meals" has all the sections of recipes featuring the most common meats, but also included are sections featuring veggies and desserts. Simply Mushroom Stir Fry caught my attention in the veggie section while Warm Apple Stir Fry in desserts looks to fit in particularly well on a crisp fall day. I intend to prepare both for my family, and I am sure the results will be positive.

Stephens teaches that pre-prepping food for a few meals ahead when one has the time will allow a meal to be fixed in only a few minutes when it is time to cook dinner. She also tells how to utilize pre-cut veggies to eliminate your prep-time completely.

I highly recommend "Amazing 7 Minute Meals" to everyone, for good health is essential to all. There is just so much useful information included that any recipe collection will be better off with this book on its shelf. The recipes are simple and easy to follow, so complicated and hard to find ingredients cannot be an excuse here. This collection is much more than simply a book of recipes. The information could change your life!

Finally I have a fast and healthy alternative to fast food. I do love to cook and there are times when I will happily puddle around the kitchen all day creating mouth watering meals. Unfortunately, far too often, I find myself running behind and looking for something quick to feed my family. Though I usually try my best to find nutritious alternatives and create whole foods meals, it is generally with fifteen minutes to supper that I pull out the canned foods, heat and serve meals, or order a pizza.

Amazing 7 Minute Meals gives me lots of tasty alternatives. I love stir-fries for their fresh taste, the use of whole foods, and the ease of preparation but hadn't really realized the number of different tastes that could be created. Before going through this book, I basically made two types of such recipes- one with an Asian flavour and one with a Mexican taste. Now, I have over 100 recipes from the book and I've already started to experiment to create even more possibilities.

I really don't enjoy cooking but this book makes the effort an adventure. I've shared the joys of this book with my Weight Watchers group and we are all excited about the new flavors and combinations we are discovering - and in a healthy mix, too. I especially like having the ingredients/shopping list for each recipe. That's a very nice touch.
