For smart and tidy baking and cooking, Cuisipro's deluxe food mill makes a valuable player in any home chef's starting lineup. The extra-large round vessel fits securely on top of another bowl or pot with a plastic-coated roll bar on one side and a long, non-slip handle on the other. To operate, simply place the fruit or vegetable to be pureed inside, and turn the knob on top. As the food moves through the straining disk, unwanted parts like skins and seeds get left behind and a handy plastic scraper underneath sweeps the puree down. Three interchangeable disks in 2mm, 3mm, and 4mm sizes allow the chef to choose a finer or coarser consistency. Crafted of 18/10 stainless steel, the food mill disassembles for cleaning. Not worth the money
I bought the mill to make sauces and mash potatoes. It looks good and well made on the surface, but has ridiculous design flaws. When you turn the mill, the knob unscrews no matter what you do, so that you have to constantly screw it back on while you are trying to grind the food. This makes it virtually unsuable. Not only that, but the blades do not gather up the food, so that you have to constantly feed the food into the blade. For such an expensive item to be this poorly designed is unconscionable. I then tried another one with the Bed, Bath, and Beyond label, $50 cheaper. The knob didn't screw off, but still the blades did not grind the food. I'm going to stick with a regular food processor and an old-fashioned hand potato masher. I'm fed up with food mills.
Pricey for the Product Results
I tried the mill right after it arrived. To be honest the scraper is worthless. It's easier to use a spatula and more effective. The grind seem fine enough and I like the ease of assembly. Now the real proving ground to me will be in the longevity of sharpness and how well it works for other projects, but for the money I was a little disappointed.
Much better than mashing or straining
I don't need to use a food mill very often, but for things that require a fine texture without being squashed, this is a great product. In particular, I really like using this food mill for making mashed potatoes. A potato masher squashes the cells of the potato and can make your mashed potatoes gluey. The food mill is much easier to use than a ricer, and the potatoes come out truly light and fluffy. The year I used this to make the mashed potatoes for Thanksgiving, it was the only dish that we ran out of. The food mill is also great for straining raspberry purée and making perfectly smooth tomato sauces.
Although I love this food mill, I have to admit that at this price it's a luxury. If you make a lot of sauces, it's probably worth the money. It comes with three discs of varying sizes and while it takes awhile to get the hang of it, once you do it's very easy to use and easy to clean. Since it is costly, however, and takes up a lot of storage space, it isn't worth it if all you're going to make are mashed potatoes. In that case, get yourself a ricer or stick to making smashed potatoes, because while the texture of foods processed in a ricer is incomparable, it just isn't worth it unless you're a serious cook with money and space to spare. If you decide to get a ricer, however, this is the one to get as it's easy to use and clean. I know some people have had issues with durability, but I haven't found it to be a problem.
