The raised alligator logo on the lid lets you know this is one rugged roaster. Made of durable cast iron, the heavy oval-shaped pot is ideal for slow-roasting a turkey, a couple chickens, pot roast, gumbo, stew-you name it-either outdoors in a campfire or indoors in an oven or on the stove. The interior of the roaster measures 17 by 11 by 5-1/4 inches, and the overall length from one integral handle to the other is 20-1/2 inches. The domed lid sends moisture back into the pot and features a handle that can be grasped with ease by a padded mitt.

Before the first use, the cast-iron roaster and lid should be seasoned at least once and preferably several times. This will help prevent rusting and creates a nonstick finish. After washing and drying thoroughly, the roaster should be coated with solid vegetable shortening, such as lard or bacon fat (not butter or margarine). Let the pot 'bake' in a 300-degree-F oven for one hour, then remove and wipe off the excess. Spraying with a non-stick shortening after each use can also help season the pan. Most cast-iron cookware can be scrubbed clean by hand without detergents and then dried immediately. Best Thanksgiving Turkey Ever4
This pan (After a lot of cleaning and seasoning) made the best Thanksgiving Turkey ever... It was moist and perfect and a few guests told me it was the best they had ever had. I had never used Bayou as I love Lodge but they did not offer a roaster in this size (needed something for a 18lb turkey that JUST fit.) The quality of the cast iron was OK and needed more seasoning than a lodge that are pre seasoned but it did a GREAT JOB... I have cooked 2 small chickens in it and they were great as well...

You can do it all5
With this cast iron roaster you can do it all. I use it in the oven, over a fire, in a fire, on the cooktop, in a gas grill, over propane flames, etc. We used it for fryin fish, cooking biscuits, roasting pot roast, baking cakes, and on and on. It is very heavy, so be warned. But you can used it everywhere to cook nearly anything.

Who needs quality control?1
After reading the other reviews I was a bit skeptical, but the problems seemed associated only with the inadequate packaging for shipping. With Amazon's free shipping, I thought I would just have them send me a replacement if necessary.

The unit arrived without shipping damage. But it contained a large crack which was due to the original casting operation. Also the cover didn't fit. I decided to try ordering the Camp Chef to see if that was any better.

On the packing slip, it states that the S&H was over $26. Amazon must be losing money on just shipping this unit, let alone having to pay for the return shipment via USPS! I can't believe that Amazon doesn't either pull the product or make Bayou Classic fix their horrendous QC problems.
