While this style of porcelain baker is usually called a quiche pan, you'll have equally good--if not better--results using it with custards or fruit or custard dishes. Its shallow, attractively rippled sides create a decorative affect for desserts such as clafouti or Bavarian cream, and the low sides make a perfect cooking-and-serving container for warm appetizers such as garlic flan--guests can dip their chips right into the bowl! You can use this for pastry-on-the-bottom pies and quiches, but you'll get crisper results from a standard metal pan.
