Great saucier. Make the investment!
We received this saucier as a wedding gift from a friend, and she really knew what she was doing when she bought this pan! The heat distribution on this thing is incredible, so you don't get the typical "hot" and "cold" spots as you would with cheaper cookware. The weight is substantial, but not too much even for a petite person such as me to handle, lift, or hand wash. The little vent hole in the lid is a nice touch, and the colors (we have flame) will really brighten things up around your kitchen. It is well worth the money to purchase this pan, especially since it has a 101 year warranty.
the best rice I've ever made
This is a great sauce pan. I made the best spanish rice in it, moist and silky, not too wet and not too dry. cooked evenly, and love the vent in the lid. The only drawback is that it is heavy compared to other pans. I aso love the versatile color. I will continue adding to my collection of Le Crueset.
Wow, great risotto pan
Being enameled cast iron, this thing gets very hot very evenly. I have moved cheese sauces to another saucier because of the heat factor. Non-cheese based sauces to tremendously in this saucier.
It heats so evenly and the inside has no seams or corners for sauce to hide in. I have found that it handles risotto fantastically!
The size is fine for 4 people but beyond that, you should consider another pan. Another limiting factor is the enamel... Remember that the inside is enameled as well as the outside. That makes food-sticking issues and clean up small problems. The rub is this; you shouldn't use metal whips on the ceramic surface. That means you have to use wooden utensils or silicon coated whips. I have a Le Creuset silicon whip and it's a pain to use and clean. Recently, that's discouraged me from using this saucier and I find myself using a larger, clad stainless steel saucier.
Overall, I'm happy with this. The risotto alone makes it a keeper, but small size and ceramic interior have forced me to use another saucier. If I had it to do all over again, I would have just bought the bigger saucier to begin with...
