I read this when I was in first or second grade. I remember being impressed with how Wilbur wanted to avoid being slaughtered and eaten.
Animal FarmAnimal Farm by George Orwell
Buy used from: $3.03
I read this in 7th grade; while I had been told it was a thinly disguised attack on the Russian Revolution, I still remember the horror that the horse, once deemed unsuitable for work, was sent to a glue factory.
Doctor RatDoctor Rat by William Kotzwinkle
Buy used from: $0.50
Written by one of my dad's classmates from Penn State, I started reading it in the 9th grade out of curiosity. It's description of the horrible manner in which animals are treated - both in science labs, and in food production, made a mark. It would not be much longer before things would click.
Vegetarian Epicure Book Two (Book 2)Vegetarian Epicure Book Two (Book 2) by Anna Thomas
Buy used from: $1.35
Actually, it was the original, Vegetarian Epicure, which sparked my love for cooking, and the fact that vegetarian food did not have to mean "boiled, bland vegetables", or salad.
Introduction to Indian Cooking (Penguin Handbooks)Introduction to Indian Cooking (Penguin Handbooks) by Madhur Jaffrey
Buy used from: $2.15
This is not a strictly vegetarian cookbook. However, many Indians are vegetarian in their daily lives, and Jaffrey introduced me to this flavorful, easy-to-make cuisine. There are enough vegetarian recipes to go around, suggested menus, and Jaffrey's obvious love of cooking.
Madhur Jaffrey's Cookbook/ Easy East/West Menus for Family and FriendsMadhur Jaffrey's Cookbook/ Easy East/West Menus for Family and Friends by Madhur Jaffrey

Again, not strictly vegetarian, but easy to sub tofu for chicken in these menus. I got my first taste of authentic Indonesian, Korean, Indian, and other flavors in this book.
Skinny BitchSkinny Bitch by Rory Freedman
Buy new: $10.04 / Used from: $0.88
I thought this was a diet book. Well, it is, but it made a rather in-your-face argument for the vegan, organic diet. When I read it several years ago, I still had my doubts, but it started my thoughts that dairy was NOT the health-food I'd been told.
Vegan with a Vengeance : Over 150 Delicious, Cheap, Animal-Free Recipes That RockVegan with a Vengeance : Over 150 Delicious, Cheap, Animal-Free Recipes That Rock by Isa Chandra Moskowitz
Buy new: $12.21 / Used from: $10.38
Finding this book was a real watershed moment for our family. Before V w/a V, we thought that vegan food consisted primarily of salads, or weirdo Frankenfoods, like highly-processed meat substitutes. Moskowitz showed us that it could be easy, and delicious, to go vegan.
Veganomicon: The Ultimate Vegan CookbookVeganomicon: The Ultimate Vegan Cookbook by Isa Chandra Moskowitz
Buy new: $19.80 / Used from: $17.98
Another great vegan cookbook. Moskowitz encourages improvisation in your cooking, and I realized that I could easily modify my previous lacto-ovo veg recipes to the vegan way.

This book helped my whole family adjust to our vegan diet.
The China Study: The Most Comprehensive Study of Nutrition Ever Conducted and the Startling Implications for Diet, Weight Loss and Long-term HealthThe China Study: The Most Comprehensive Study of Nutrition Ever Conducted and the Startling Implications for Diet, Weight Loss and Long-term Health by T. Colin Campbell
Buy new: $11.29 / Used from: $9.39
Up until last year, I still held a small conviction that dairy and eggs were important to good health. Campbell's China Study gives overwhelming credence to the health benefits of a vegan diet, and the detriments of the typical Western diet.
