Soba noodles are thin Japanese noodles made of buckwheat flour (soba-ko) and wheat flour (komugi-ko). They are roughly as thick as Italian spaghetti, and prepared in various hot and cold dishes. The most basic soba dish is zaru soba in which boiled, cold soba noodles are eaten with a soya based dipping sauce (tsuyu). Buckwheat is very high in protein which has all of the amino acids essential for good health. Buckwheat protein has also been shown to reduce cholesterol levels by absorbing cholesterol in your small intestine. Buckwheat may have some value for diabetics as some studies on rats have shown that Buckwheat reduces blood glucose levels by as much as 12-19%. Buckwheat is a naturally high in dietary fiber, lecithin.

pricey but worth it for me
actually, the price on amazon is very good, though i can't remember how much my local grocery listed it at. but when compared to other soba noodles, this brand is insanely expensive, but since this is the only organic and unsalted soba noodles i heard of, i'm paying for it.
given how salty regular soba noodles are already, then you add more salty ingredients into it, i wanted to cut back on the amount of sodium. i guess getting unsalted noodles is like not adding salt to your typical italian pasta, though adding salt to your pasta probably doesn't add as much salt as the soba noodles you normally find at grocery stores. but having unsalted noodles is that your dish may not taste as "tasty" due to the lack of salt - you've been warned.
my main reason for purchasing unsalted noodles was to cut back on the saltiness, so this works out great. but if you're out to impress with a soba dish, you may notice the missing salt.
