Shade grown, certified organic, and Fair Trade. Grown by a small group of coffee producers nestled in the mountains just below Volcano Tajumalco (the highest volcano in Central America at 13,715 feet). The growers are certified and passionately committed to organic agricultural practices. The coffee variety is Arabica Bourbon, Typica and Caturra. This rare coffee has very good acidity and is nicely balanced with a slight hint of spice. Because of the small production, there is only a limited quantity of this coffee available each year. Recommended roast: medium to Full City or French. We are committed to providing only Fair Trade certified green coffee. Purchasing Fair Trade guarantees the growers were paid a fair and living wage for the coffee they labored to produce. All of the green coffee we sell was purchased in small lots of only the best quality arabica beans. This green coffee must be roasted before it can be made into a coffee beverage. We recommend roasting with a home coffee roasting appliance such as the FreshRoast Plus, also available from Seven Bridges Cooperative.

A great starting point for home roasters
The best way to describe this coffee is as well balanced and not overly distinctive, in this case both good things. There are more exotic coffees to be found if that's what you're looking for. This coffee doesn't have flavors that jump out at you but rather provides a laid back, yet refined cup of coffee. In that sense, this is a very good choice for introducing people to home roasted coffee as the focus of the comparison to commercial coffee is the overall quality rather than the presence of particular varietal notes.
Overall, the beans were high quality and roasted consistently. The shipping was fast. Highly recommended.
