Works!
Well, as usual Alton Brown talked me into needing something I didn't know I needed.... Well it works great, and makes such an interesting conversation starter at potluck diners.
You can buy a much less expensive white version in the Amish stores, but a blackbird is such a poetic thing to remember one's childhood nursery rhymes and have fun with the grandkids with besides.
I cut the crust with a small bisquit cutter and it fits right over the bird. Venting is as promised and I don't get boil over unless I totally overfill my pie, which I tend to do. This has really minimized the mess, even then.
Keeps to cook bottom crusts
My mother always used a pie bird in her 2 crust fruit pies. I never really understood then, just thought it was cute. But, after seeing a cook on TV use one and gave the reason why, I tried it. And, oh my goodness did it ever work! If you use it right, you'll have a cooked, crisp bottom crust even with a 2 crust fruit pie. Promise. You just have to make sure you place the pie bird on top of the bottom crust BEFORE you place your filling. Pour the filling around the pie bird, and after rolling out your top crust, place a small "X" in the middle of the top crust and top your filling (so the "X" goes over the pie bird). Seal the edges and make a couple additional small vents with a knife and bake. Also, use a good glass pie pan!
The Perfect Pie Bird
Not sure how much there is to say about a pie bird. If they work they are great, if they don't work they are worthless. This pie bird works! What kicks me up to 5 stars is the traditional "black bird" style (call me old school).
Of course, there are other birds out there that will certainly vent a crust, and I'm sure they are just as good. What I would avoid myself, is one that is attached to the pie dish. They are simply harder to clean and limit what you can use to make a pie with.
