![]() | The classic cookbook: The best of American home cooking : together in one volume, The cook's bible and The dessert bible by Christopher Kimball
Buy used from: $28.92 If you have only one cookbook in your kitchen, this should be it. Recipes tackle all the classics of cooking and baking, adding a few twists here and there. The author includes all of his research for each dish, testing several recipes, giving feedback, tweaks, and a final master recipe. There are great charts for troubleshooting (why is my cake too domed or sunken?).

![]() | The Professional Chef by The Culinary Institute of America
Buy new: $44.10 / Used from: $29.24 A great educational tool, endless tutorials, plus backgrounds on foods and regional/international cuisine. The recipes are great standards that you would find at restaurants with clearly explained directions. You can add your own twists and modify from there. Excellent resource for terms and techniques.

![]() | The Silver Spoon by Phaidon Press
Buy new: $29.70 / Used from: $9.95 Thousands of real Italian recipes (not Olive Garden!!), separated by main ingredient or course. They are often simple and always flavorful. I especially like the prepared menus from restaurants in the back. The only caveat: do not expect pictures for most of the recipes.

![]() | Happy in the Kitchen: The Craft of Cooking, the Art of Eating by Michel Richard
Buy new: $29.70 / Used from: $11.98 This book is so unique. While the procedures may seem complicated, the end results are spectacular twists on traditional preparation and presentation. It is very experimental though and meant for someone who enjoys using their kitchen like a laboratory, where eating is only half the adventure. Good fun, awesome variety.

![]() | Bobby Flay's Mesa Grill Cookbook: Explosive Flavors from the Southwestern Kitchen by Bobby Flay
Buy new: $23.10 / Used from: $18.98 I don't usually tout Food Network stars, nor do I particularly favor Southwestern cuisine, so for this book to make it on my must-have list says a lot. The flavors are outstanding and each recipe offers some familiar flavors combined with a punchy nuance. It is quite technically sound, giving appropriate times and temperatures for the best outcome.

![]() | Chinese Cuisine (Wei-Chuan's Cookbook) by Huang Su-Huei
Buy new: $16.47 / Used from: $9.49 This little soft-bound book was a great learning tool for one of my Chinese friends. The recipes are outlined in both Chinese and English with numbered steps. There is also a helpful area in the front that explains differences in various ingredients and cooking utensils. This is not fusion or Americanize-Chinese food. This is the real deal. Check out other books by Huang Su-Huei.

![]() | Larousse Gastronomique by Larousse Gastronomique
Buy new: $46.75 / Used from: $49.99 This is a staple encyclopedia for all things culinary. Granted, it is from a Western-World point of view, there is a reason it is still the corner stone for many great chefs. This encyclopedia has a huge variety of definitions, origins, and recipes. Sometimes I just flip through it for fun.

![]() | Cuisinart DFP-14BCN 14-Cup Food Processor, Brushed Stainless Steel
Buy new: $176.95 / Used from: $160.00 I cannot tell you how indispensable this food processor has been. I'm sure most home chefs could get away with a different brand, but I am partial to Cuisinart for this item because when I go home to cook at my parent's house, their little almond Cuisinart from their wedding is still working perfectly.
|
![]() | Cuisinart CSB-77 Smart Stick Hand Blender with Whisk and Chopper Attachments
Buy new: $49.95 This may not be a "Must-Have," but it is definitely an "Awesome-to-Have" item. I use mine more than I thought I would, usually for creamed soups. I probably use it weekly and I have yet to use any attachment other than the blender portion.

![]() | KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White
Buy new: $198.96 / Used from: $188.99 This is another classic staple in our kitchen. I just love it for kneading dough, making meringues, and being my extra hand when I am combining hot ingredients for custards or buttercream icing. I do wish I bought the larger version, but I also bake a little too much for our family and the size limitation keeps me in check :)
|
![]() | Villaware V177 Al Dente Pasta Machine
Buy new: $21.95 / Used from: $24.99 Don't waste your money of fancy attachments and motorized versions. This is all you ever need for the best ravioli, fresh linquini, and even for rolling out crispy thin cookies or cannoli rounds.
|
![]() | Salter 5-Pound Add and Weigh Kitchen Scale with Jug, White
Buy new: $9.98 / Used from: $6.98 I know the electronic scales are prettier and more precise, but if you just need an affordable workhorse to get the job done, this little scale is it. No need for batteries or plugs. It is light and easy to clean - a must have if you are using the Professional Baking cookbook.
|
![]() | KitchenAid 12-Cup Snap-In Muffin Pan
This has been a huge convenience in the kitchen. It has all the rigidity of a metal pan and the nonstick of the silicone, but it is much easier to clean than either one. Plus, the individual cups pop out for easy storage.
