This 15-by-20-inch board in a natural brown finish is constructed of a natural compressed wood-fiber laminate made from sustainable harvested trees. It’s formed with a slate-colored (black) core that shows through at the juice groove cut around the perimeter. The multi-functional surface won't dull knives; is heat-resistant to 350 degrees F, which means hot pans can be placed on it without leaving a brown ring; requires no oiling; and is dishwasher-safe and approved by the National Safety Foundation (NSF). Both the top and bottom surfaces may be used for cutting meat, chopping onions, slicing bread, and presenting hors d’oeuvres. The natural finish will darken with use, and a hole in the corner allows hanging. This item is made in the USA.

Tom's Tips

  • Set a cooked roast to rest on the board while making gravy. Let the juices drain to the moat and add them to your gravy.

About Tom Douglas

Tom Douglas is an American chef, restaurateur, and writer. He is well known for helping to define Northwest cuisine and igniting the Seattle restaurant scene, winning the James Beard Award for Best Northwest Chef in 1994. Since 1989, Tom has opened five of Seattle’s most popular restaurants: Dahlia Lounge; the Greek-inspired Lola; Serious Pie pizzeria; Palace Kitchen; and Pike Place Market’s iconic seafood restaurant, Etta’s. The best cutting boards!5
This board is the largest I can fit in my dishwasher and unlike the rounded shape of the other boards the straight edges are to easier manage especially for drying and storage on edge.

Although thin and lightweight, Epicurean boards are very strong and the material helps your blade last a long time. I am amazed this product survives the dishwasher. It comes out safely sanitized with no warping or discoloration every time. The board surface does develop cuts with useage, but that is what keeps your blade safe.

The slotted liquid capture saves you from juices dripping on the counter top or the floor. But it isn't really designed well to transfer these juices to a gravy. Attempting to pour out any captured liquid into anything smaller than a sink can be a challenge.

I wish this board had the snap on silicone corners to help stabilize it like some other Pinzon boards. you will likely need a bar towel to keep this board from sliding around on most counter tops.

Top of the line...and largest in the line5
I've been using this Epicurean/Pinzon cutting board for about a month now and it is an outstanding tool for most kitchens. I have a smaller Epicurean that I've used for a year and it's my favorite cutting board for everyday use. This particular cutting board is a lot more specialized to me, though, because of its sheer size.

The surface of the board has a nice smooth finish to it, but it does get nicked up over time with regular usage. Based on using other Epicurean boards, I expect this board's long term durability to hold up just fine. The board does have some heft to it, so even though it has a small cut-out square at the top that can be used to hang it, you better have a strong hook to hold it. Both sides of the board perform well, and the black "juice moat" does a nice job catching liquid when you are cutting a juicy roast or something of the like on it. I noticed some reviewers mention that the board will slip when cutting on it, but I never had that problem while working on my kitchen island that has a finished wood surface.

I'll just mention that you should double check to be sure that this is the size that you want. The board is large and somewhat heavy, it doesn't fit in my small dishwasher, and it's difficult to wash in my shallow apartment sink. But if you have a need for a huge cutting board and you're ok with paying a little bit more per square inch, this Epicurean/Pinzon board is a high quality product that I strongly recommend.

Substantial and well designed4
I love that a lot of thought was put into this cutting board from the groove to catch juices, to the slot to hang it from a hook, to be dishwasher safe! This is a very large and slightly heavy cutting board but perfect for cutting roasts or other large items. The look is quite contemporary but could fit well into more traditional kitchens as well. If this is how well the entire Tom Douglas (a great chef from a great foodie city) I am going to be looking at his collection!
