Editorial Reviews

Amazon.com Review
Featuring durable stain-resistant steel construction, this sturdy sharpening tool promises to keep kitchen knives in razor-sharp cutting condition. Measuring 9-1/4 inches in length, the gradually diminishing circular rod has blade-honing, miniscule ridges running up and down its body. A protective steel guard keeps fingers safe during sharpening. Designed to fit comfortably in hand, a fused blend of hardwood veneers and resin comprise the unique ebony Pakkawood handle. The steel construction resists rusting and withstands years of use. Although dishwasher-safe, hand washing is recommended. Manufactured in Japan’s renowned sword-making city--Seki City; this tool includes a lifetime warranty. ---- Amy Arnold

Customer Reviews

Works great, handle is plastic though4
The steel works great as expected from Shun. The guard is beveled at the correct angle for the blade which is very helpful in guiding your first stroke to get the correct angle.

The only problem, and this is aesthetic and not functional, is that the handle is made of a dark plastic and not wood like the knives. You can see this in the photo above but Amazon's description is faulty. I would have liked to have a wood handle for it especially considering the price. But, it still works great.

Works Like It Should5
I recently purchased some Shun Elite knives. They cut like a light saber right out of the box but after a couple of months they dulled slightly. The Shun honing steel brought them right back to life. I really like the guide on the steel. It ensures you get the correct angle for Shun knives.

Perfect honing steel, great length and weight5
Great honing steel that is a bit longer than others I looked at (seems to help a bit for the bigger knives) and an attractive taper (not sure that matters, but it looks nice). I've only had it a brief time, though I've used it frequently. Despite an occasional clumsy collision, this steel slides smoothly and shows no nicks. It straightens the edge on my (mostly) mid-grade knives with ease.

Another reviewer claimed the handle was plastic. Perhaps he was mistaken, or perhaps he had a different version. But mine, purchased later, has a visible grain if you look close, under a dark ebony finish. It does almost "feel" plastic due to the hard resin finish, but it is the same material as on the Shun knives a friend has (though the steel lacks the metal endcap that her knives have).

Aesthetics are open to debate, but I think it looks much nicer than most, and performs better than any other I've used for daily straightening. For less frequent light sharpening, I recommend a diamond steel. Global makes the best diamond steel I've seen, but I've stuck with the DMT for a quarter the price.
