They work fine, but not really necessary.
Got these at the same time I bought the grill. With the additional amazon $25 discount for spending $125, it seemed like a good idea.
However, after making omelets in both the Omelet Plates, and the Baking Plates, I prefer the latter. I like my omelet folded, with the cheese and other fixings in the middle. With the Omelet Plates, you place the eggs and other fixings in the oval indentations. While cooking, it puffs up considerably. You then sprinkle cheese on top after it is done. It tastes fine.
I would wait until you have used the basic plates before you decide you need the Omelet Plates.
I love this
Sample recipe. Egg Beaters Western--protein calories. A smidge of cut up turkey or chicken. Cooking spray. Set on medium. One serving in two of the three spaces turkey and Egg Beaters--cook on medium for 2 to 2.5 minutes. A sprinkle of shredded cheese added after the cooking--sandwich the cheese between the two 'omelets'--salsa for added kick and you're rocking and rolling to a great breakfast in 5 minutes.

These plates would be perfect if they came with some of the recipes that were advertised on the box. I even searched google and couldn't easily find any recipes specifically for it. (I'd like to try the brownies in the omelet plates as that is one of the things mentioned on the front of the box.)
