Prentiss Carl Haupt, Certified Executive Chef
Executive Chef Carl Haupt understands the properties of food from twenty five years as a practicing chef and teacher. He developed 137 recipes so the home cook can make everyday and gourmet style food to help relieve some of the daily pain of arthritis.
A Vietnam veteran Marine sergeant, Chef Carl was educated at Pennsylvania State University and the Culinary Institute of America, Hyde Park, New York. He taught at the Culinary Institute and later was Chef-Instructor at the University of Hawaii, Maui Community College. In 1986, he published "Heavenly Hawaiian Recipes", a cookbook of his island favorites.
One of only 2,200 Certified Executive Chefs worldwide, Carl has received many awards including Holiday Magazine's Top 500 Restaurants in America for three consecutive years.
James McKoy, M.D.
Dr. McKoy is a board certified internist and rheumatologist. Over the past fifteen years, he has searched out and used the best of alternative therapies in conjunction with the best of traditional treatments for his patients. Dr. McKoy received his training at the University of Iowa Medical School, Iowa City, Iowa and Letterman Army Medical Center, San Francisco, California. He served as a physician for 22 years in the U. S. Army and retired as a Colonel. From 1985 to 1996, he held a faculty appointment at the University of Hawaii, John Burns School of Medicine. He is presently a rheumatologist and pain specialist for Kaiser Permanente of Hawaii. Dr. McKoy is a fellow of the American College of Rheumatology and a member of the American Academy of Pain, National Medical Association and Hawaii Medical Association.
Dr. McKoy is on the medical advisory board of Arthritis Today magazine. He answers the alternative medicine questions in the magazine and assists in writing articles that deal with alternative care for arthritis. He provides advice on care for arthritis to writers from newspapers and wellness journals and has appeared on numerous local television news and radio shows. He is an often requested speaker for physician, patient and wellness groups.
In addition, to his medical training, Dr. McKoy is a Christian counselor and believes that in order to optimize the health of patients with arthritis, we must treat the whole person; spirit, mind and body, offering appropriate spiritual counseling when needed.
