Prunes are dried plums. There are a number of varieties of plums but not all are used to make Prunes. Prunes are made from a firm-fleshed plum that has higher natural sugar and acid content than most plums. The extra sugar and acid allow the plums to be dried without fermenting. Plums are allowed to mature on the tree until fully ripe. They are then mechanically harvested and dried for up to 24 hours under strictly monitored conditions. No sulfites.
