Allspice is mative to the West Indies and tropical Central America. Columbus found it growing in the Caribean island and thought he had found the pepper he was looking for; hence allspice's Spanish name pimienta(pepper), which was anglicized as pimento. Allspice is the important spice that sitll comes almost exclusively for its region of orgin - which also makes it the only one grown almost exclusively in the New World. Whole Dried berries: look like large, brown peppercorns, are infinitely preferable: they crush easily if you need just a little allspice, and they can be kept in an airtight jar almost indefinitely. An important ingredient in jerk seasoning pasted that are rubbed onto chicken, meat or fish for grilling. It is also used extensively, crushed rather than ground, in breakfast breads, soups, stews, and curries. Good with eggplant, most Fruits, pumpkins and other squashes, sweet potatoes and other root vegetables. Combines well with chili, cloves, coriander, garlic, ginger, mace, mustard, pepper, rosemary and thyme. In the Middle East, allspice is used to season roasted meats. It is used in pilafs and goes into some Indian curries.
