This is both an entertaining book as well as a practical guide with a great section on sock knitting. Not necessarily a great beginners book, but experienced knitters will love it!
Alterknits: Imaginative Projects and Creativity ExercisesAlterknits: Imaginative Projects and Creativity Exercises by Leigh Radford

Creative and inspiring. I haven't made any of the items in the book, but it has given me ideas which is just as important if not more so. It also comes with a neat little notebook for sketching out your own designs, and it has some fun ideas for knitting parties as well.
When Bad Things Happen to Good Knitters: An Emergency Survival GuideWhen Bad Things Happen to Good Knitters: An Emergency Survival Guide by Marion Edmonds

This is a book for those who have been knitting for awhile but can't find the answers to some persistent and common problems in standard textbooks on knitting. It has some great tips I'd never have thought up myself.

Great journal for the avid knitter. Not necessarily something the beginner will need, but great for those ready to break free of the printed pattern!
Stitch 'N Bitch Crochet: The Happy HookerStitch 'N Bitch Crochet: The Happy Hooker by Debbie Stoller

Good for the knitter who doesn't know how to crochet. Knowing both skills, in my opinion, opens the doors to greater creative freedom and more unique designs.
Stitch 'N Bitch: The Knitter's HandbookStitch 'N Bitch: The Knitter's Handbook by Debbie Stoller

I wish this book had been available when I was in high school and first learning to knit. I love Big Book of Knitting for techniques, but this is a great introduction to the craft that will appeal to the new generation of knitters.
Charmed Knits: Projects for Fans of Harry PotterCharmed Knits: Projects for Fans of Harry Potter by Alison Hansel
Buy new: $10.19 / Used from: $4.81
I don't typically like pattern books, or Harry Potter but I bought this book as a gift for a friend who is an ultimate Harry Potter Freak. I am teaching her to knit and I hoped this book would keep her interested as well as provide her with years of projects as she increases her skills. It has the best size ranges of any book I've seen, as well as yarn requirements that are easy to substitute.
Mason-Dixon Knitting: The Curious Knitters' Guide: Stories, Patterns, Advice, Opinions, Questions, Answers, Jokes, and PicturesMason-Dixon Knitting: The Curious Knitters' Guide: Stories, Patterns, Advice, Opinions, Questions, Answers, Jokes, and Pictures by Kay Gardiner
Buy new: $19.77 / Used from: $14.50
I was impressed with this book. It has a unique presentation and feels more like a conversation with a knitting friend than a pattern book. I include it because of its section on log cabin knitting (a technique I've not seen elsewhere) as well as a list of websites with great bargains on yarn!
