If you're a real whipped cream aficionado, you probably keep a stainless steel bowl and a separate set of beaters in the freezer, ready to whip up a batch at a moment's notice.

Well, OK, no one does that, but if you do use an electric mixer to make whipped cream, you run the risk of over-beating it and turning it into butter. Mm, boy, nothing says good eatin' like a blob of butter on top of strawberry shortcake. And despite marketing claims and infomercials, no one makes a blender or food processor that produces honest to goodness whipped cream.

Canned whipped cream might be handy but you don't know what's in it, and unless you have the courage to open a pressurized container, you can't get every last dollop out of the can. Per serving, it's also the most expensive way to top desserts.

An iSi Dessert Whip pays for itself after a couple dozen batches, and it adds a measure of fun you don't get with a mixer. Just pour a pint of whipping cream into the jar along with 6 teaspoons of powdered confectioner's sugar, screw on the top and shake it for about a minute. Then, screw in a nitrous oxide cylinder and give it another 10 or so shakes. Remove the charger and park it in the fridge until you're ready to dispense the purest, tastiest whipped cream this side of a fine restaurant. Just turn it upside down, give it 5 or 10 good downward thrusts, hold the tip perpendicular to the dessert and gently pull the trigger. Billowy clouds of delight bubble forth with just the right texture, never watery, never gummy.

Once you've mastered basic sweetened whipped cream, move on to flavored toppings by adding your favorite extracts and essences. I once made Kahlua whipped cream by substituting a shot of coffee liqueur for half of the powdered sugar (adults only, please). Chambord (black raspberry liqueur) topping is just as decadent on top of a slice of chocolate pound cake spread with black raspberry preserves.

After all the gas has exhausted, you can unscrew the top and use a narrow spatula to scrape out the last dollops. It won't look the same but it'll taste just as good.

Clean up is easy. Fill the container half-full with hot water, add a little liquid detergent, screw on the top and shake for about a minute. Rinse the jar thoroughly and hand wash the rest of the parts. It doesn't take long and the flavor has already told you it's worth the effort.

For years I pined over the professional $100 models but I knew I never needed that much whip cream at a single dinner...but OMG when I saw this mini...half pint version at less than $40.00 I made a spontaneous splurge! I was not at all unhappy with my decision. This little thing is BRILLIANT! I will never need to hand whip cream ever again. The portion is just right for most desserts and the left overs can be used in your morning coffee or the next night at dinner for up to 14 days! You just rinse off the decorator tip replace it on the canister and put it in the refrigerator. This baby is built to last too....and did I mention it's a cinch to use and clean. I am HAPPY HAPPY with mine!

Want quick, easy whipped cream that you can customize in seconds? The iSi works very no matter how you look at it, but you do have to watch for two small hitches.

#1 - don't overfill it. Fill the canister about 2/3 full or less and you're fine.

#2 - If you don't twist the dispenser nozzle fully closes, the unit continues to ooze cream.

Once you figure these out, you're good to go.
