Great Starter
This is a "Fake Book", which means a single staff of somewhat simplified music. "Easy" in "C" means that Hal Leonard has transposed it to C, which is most common instruments (piano, flute, harmonica...) It does NOT include tabs or frets, you do need to read music, but you don't need to parse key signatures.
Fake books are used for several things. Professionals use them to help them quickly "fake" knowing a song. A decent musician can sight-read them and sound convincing. Beginners (or less serious musicians) use them because you can enjoy playing a song you recognize without having to deal with key signatures and changing ones, odd timings and very complex bits. The cost is that some interesting parts may be simplified out and, if you play piano, you're only going to have your right hand busy; you'll have to fake with the left.
This book has a wide variety of great recognizable songs, though few current ones. Mostly old standards, few by way of rock. It's great to play to and to learn from, but if you're learning you'll eventually want a more comprehensive book, once you can take on the trickier bits. That doesn't mean you don't need this, just that eventually it will help you outgrow it. Professionals should jump right to the Ultimate Fake Books, also on Amazon.
Excellent for Beginners
I'm new to the piano (and music notes in general). I find this book to be very very useful... plenty of songs to choose from.... an intro is provided for every song. Highly recommended.

This book has a great mix of songs from rock to showtunes, etc... When played, they sound good, not too oversimplified for me. All song are really in the key of C, which definitely makes it easier to read and play.
