Make quick work of small foods with this 4-inch parer from Sointu. The knife is made entirely of a proprietary, high-carbon stainless steel called Cromova 18. The material, which contains 18 percent chromium, is hard enough to stay razor-sharp, yet soft enough to sharpen. Unlike most Western-style knifes, Sointu's have thin edges that are ground straight to a point rather than beveled, resulting in a sharper, more durable blade. What's more, the knife has no bolster; rather, its hollow, non-slip handle is filled with just the right amount of sand to create a proper balance.
The knife features a seamless, hygienic construction with smooth contours, preventing food and dirt traps. Made in Japan, it comes with a limited lifetime warranty and should be washed by hand.

Great Little Knife
As with the other Globals I own, this knife always puts a smile on my face when I use it. It's real handy for the little chopping and trimming jobs.
I own a variety of knives -- Henckels, Wusthof, Forschner -- and know how to keep them very sharp, but the first time I used a Global it was like stepping into a new level of sharpness and control. Whatever they're doing differently in the design and manufacturing of these knives, it's right.
