Hurts my hand, but great buy
I ordered this knife as part of a budding good-knife collection. I've used it for about two weeks now, to cut everything: chocolate, chicken, fruit, bacon, onions, and lots and lots of scrap paper (alas, even a curious man's fingernail fell victim to this knife). It's very sharp, and holds a blade as you'd expect a Henckels knife to do. It performs quite well.
However, I'm not sure it will become my favorite knife. An odd thing happens when I use it: I can't just grab the handle and control the knife like you'd expect to control any decent chef's knife. I end up laying my whole index finger along the top of the blade and crowding all of the rest of my fingers in the front 1.5" of handle space. I try to make myself use only the handle, but the knife feels unwieldy and strange. I'd chalk this peculiarity up to my own ignorance of how to properly use a knife, but here's the thing--the boyfriend, using it the other day to cut chocolate (okay, it was his fingernail that fell victim to the "test kitchen" trials), found himself holding the knife the very same way.
We might just be weird, and yes, Amazon is selling a great German knife for $33, but be warned--that grip just isn't as comfortable, nor does it provide the same power, as a more expensive Henckels knife.
Our knife purchase
This is an excellent knife. I had a J.A Henckel given to me years ago, and I soon found it to be the best of our kitchen knives. So I bought another, and now I have two "best knives". They keep their sharpening edge longer than the others. Easy to hold (I have smaller hands). And while I have several knives, if I can't find this one, (or the other J.A Henckel knife) I will search all the drawers, dishwasher and sink until I find one of the two we own, I will not grab one of the other knives. The price was very good and J.A Henckels are the only knife brand I will purchase from now on.
Kenckels does it again
This knife was to replace my 6" knife that disappeared from the twin signature set. Very clean cut, excellent craftsmanship & quality you expect from Henckels. Excellent buy
