The specially contoured edge is perfect for chopping vegetables and the hollow edge keeps food from sticking to the blade. The Twin Signature blade is made of high carbon stainless steel that has gone through our patented Friodur Ice Hardening process to insure a sharp knife that will hold an edge.

A decent knife for the price
They aren't kidding--this thing is razor-sharp. It needed no tuning up before I used it for the first time. The handle is balanced so that one feels almost no weight... which is unfortunate, because I like the weight for chopping. But the hollow-edge design is wonderful--the mushrooms and onions I sliced up were thin as paper, and didn't stick to the blade. I'd recommend it.
Interesting knife
Good balance - great for light-duty chopping and mincing where you want to be close to (or directly over) the blade for control. All claims about grippy foods not sticking to the blade are bunk - tomatoes (etc) stick like they do to any other non-dimpled blade. High quality metal. Recommended if you find your standard chef's knife lacking for control.
great piece of knife, but........
I got the knife 2 weeks ago and it really works great, very sharp blade and easy to use. The only thing I noticed is the part of its description that anything you slice or chop doesnt sticks on the blade because of its hallow edge, this is not true because I always slice tomatoes and it really sticks on the blade I have to swipe it down with my index finger to get into the bowl. But the quality is really great, I just hope this would last for a long time!
