This seven-inch santoku knife combines the precision of a Western chef’s knife and the power of a Chinese cleaver. It’s an essential in most Japanese homes as well as many professional kitchens. Poor quality for Chicago Cutlery
I purchased the knife based upon the reputation of Chicago Cutlery products, was very disappointed when the knife arrived, it was chipped and has since started to rust on various sections of the blade.
Not that amazing but good for the price if you need a generic knife.
I wanted a Santoku knife -- the flat blade and all. Ordered this one and was a little disappointed because the blade is curved. In fact, the curve matches my french chef's knife which is also made by Chicago Cutlery. It's like they just chopped off the french pointy end, rounded it over, added scallops, and called it a Santoku. Overall it's o.k. as a knife but I will stick to my chicago cutlery french chef's knife for now.
Being an amateur home cook, the nicer Santokus (Shun, etc) are just too expensive for me. That is the positive that this knife has going for it -- it's cheap. I would still buy a french blade over this, though. The curve is the same and if you're going to have the curve, the point on the french blade is handy. The abrupt, rounded-off cut-off on this Santoku just doesn't feel right.
my best tool in the kitchen
I use this knife daily and love it. It is light in weight with a shape that fits comfortably in my hand. I have used it almost daily for about 6 weeks and it has remained very sharp. I'm very happy with the value.
