Shun Classic Alton's Angled 8-inch Chef's knife. The unique 10 degree handle angle is the result of the collaboration between Shun and star of the Food Network's Good Eats show, celebrity chef Alton Brown. Not only does the design keep knuckles off the cutting board, but the natural curve created between the blade and the user's arm also make controlling the blade even easier and more precise. This 10 degree angled is the only difference. Otherwise these are Shun Classic kitchen knives. Same clad VG-10 steel blade, same "D" shaped handle, same razor-sharp edge and precise handling. It's just a brillian new angle on some already brilliant knives.

Angled 8-Inch Chef's Knife5
Outstanding knife! Great feel in the hand and, surprisingly, the angle of the blade (Alton Brown's design) seems to make slicing much easier. The blade is SHARP, as are all Shun knives. I now have 3 Shun knives and find I am ignoring all the Wustoff knives for them. And, they are beautiful (except this particular knife has a small Alton Brown graphic on the blade that looks a little silly!)

Excellent handle and sharpness with beautiful damascas look5
I previously owned cheap TV infomercial knives, then progressively moved to sharper knives I bought from Costco, then finally landed on Calphalon contemporary series and then their new VG-1 Katana series. I thought Calphalon made beautiful and very sharp knives.........that is until I switched to the 7 piece Alton Brown Shun knives. This 8 inch Chef's knife is included in the 7 piece setup.

My personal experience is that previously I had to force my hand down on large carrots, potatoes and green pumpkins. With the Shun, it scares me how sharp it is, because I can feel almost nothing when I cut the carrots and potatoes....it's as if I'm cutting tofu. I had to use some force on the pumpkin but still it feels really weird using a knife as sharp as Shun. Don't get me wrong, I love it, but it feels weird. I'm wondering if the Henckel Pros (2 men icon) and the Wusthofs are the same way.

Anyways this is probably one of the best knives I have ever used. You should buy these if you cook a lot, but if you're a beginner be very very careful. This is one sharp knife.

I've never bought celebrity kitchen gear before, since so much of it is more about name recognition than actual quality. The Alton Brown Shun Angled Knife is an exception to the rule. It handles great, my wrist isn't sore after an evening of cooking, and the offset handle leaves plenty of room for my hand, so I don't smack my knuckles into the cutting board when I'm slicing through ingredients. The only bad thing I can say about this knife is that it has made me realize how dull and pathetic my old knife set is!
