the blade is pretty thin
i havent had an issue with it bending or breaking yet (and hopefully will not) but it is pretty flexible. not sure if a utility knife should be so flexible as it's supposed to be able to do "everything". for the price, right now i am satisfied. not impressed, but satisfied.
great knife
this is becomming one of my favorite knives i use all the time. wusthop quality emeril price.
stay away from the Emerilware line
Thin, flexible, and sharp, but a bit too thin and flexible. Not very resilient. Bends easily. Does not hold a sharp edge. Tip bent badly under minimal pressure and snapped off when I tried to straighten it. (I wasn't trying to open a tin can with it or asking it to do anything it shouldn't have done -- just trimming out a ham.) I bought several "better" knives, rather than a new set, trying to get a feel for what brands or lines I'd prefer. The Wüsthof name carries some reputation, but if this knife is any example, stay away from the Emerilware. Disappointing, really. I expect top chefs to use a product before they lend their name to it.
