A good-quality knife is truly indispensable in a vegan kitchen, since so much slicing and chopping and mincing of vegetables and fruits is required. I've had this knife for four years and have been consistently happy with it.

Unequaled for grating citrus zest, fresh nutmeg, ginger root, and garlic, among many other things. A bit tricky to clean, but worth it.

A digital scale is the best gift you can give yourself as a baker. It takes all the guesswork and frustration out of measuring your ingredients and requires much less clean-up than measuring cups. Very highly recommended.

Stainless steel is the essential feature here. I like this set in particular because it has fewer spoons (four vs. the average six) so it handles more easily. Besides, I don't really miss the 1/2 teaspoon and 1/2 tablespoon measures. I recommend getting two sets of measuring spoons, so that you don't have to clean them when you switch, say, between measuring baking soda and molasses.

Another excellent multi-tasker. It's quite efficient, among other things, at transferring chopped vegetables from the cutting board to the pan.

Besides cookies, I use this for scooping out tomato paste, pesto, nut butters and other thick, sticky stuff. It also measures perfect portions for freezing the above.

A sturdy, reliable, workhorse of a pan. I use it also as a skillet, since I have trouble not spilling things when I work with a skillet.
