Brown cane sugar from the Reunion Islands. This is a perennial that can grow 15 feet high and be 2 to 3 inches in diameter. From September to November, the stalks that have matured are cut by hand, and then crushed. The juice, called 'vesoul' is obtained after multiple technical operations. It is purified, concentrated and cristallised without any alteration or chemical transformation. Origins: Reunion Islands, in the Mascareignes archipelago, sugar cane can grow easily in a warm and humid climate in a rich and well irrigated soil. Use in cooking: the brown cane sugar from Sainte Marie will add sweetness and sensuality but also a bit of crunch to a simple yoghurt or to the most complex pastry. Wonderful on fresh Zabaglione, or as golden caramel, on home-made jams or sorbets.
