Gluten may be our enemy, but food is our medicine. So we might as well make the most of it. They say living well is the best revenge. For a celiac, eating well is the best revenge (for inheriting this odd and under-diagnosed autoimmune disease). And those of you cooking gluten-free for someone you love, supporting the health and well being of your child, your partner, your friend- you rock.
In late fall of 2005 I launched Karina's Kitchen- Recipes from a gluten-free goddess. My intent was to share my gluten-free recipes and encourage newly diagnosed celiacs. My bare bones message back then was, Make today delicious (the subtext being, because living gluten-free is not so bad). And after almost eight years without gluten, I have to say- with gratitude and humility- the gluten-free lifestyle is definitely doable. With the right recipes, of course. ;-)
