This makes great rice and will cook all other grains except amaranth. I also use it for lentils and beans.

This 3 cup Zojirushi rice cooker is a smaller alternative to the Panasonic 5 1/2 cup models. The engineering design for clean up isn’t very good, however. Also, there is no steaming basket or cycle for the Zojirushi.

The recipes aren’t geared towards Ayurvedic cooking at all, but the book is an excellent guide to rice cookers as machines and to an understanding of rice, itself.

I use this for grinding spices, lentils and grains into flour. Those flours can be a bit coarse, but where else can you get green French lentil flour?

I use this blade for thinly slicing brussel sprouts and then stir frying them. No one has ever figured out that they are eating brussel sprouts since the cabbage smell is gone and the texture is different.

This "squiggly headed" masher does not work as well for my purposes as the waffle headed ones.

You will need a spice rack of some sort. The better ones will show you the contents of the jars not just the lids of the bottles.

If you are new to knives, start with the highly rated but shorter Forschner models. Either 6 inch or 8 inch.

Parchment paper is an alternative to a Silpat, but after buying two rolls of this, you would have saved money with a Silpat

Cheesecloth is needed for making ghee and paneer.

A 2 quart Thermos is needed for herbalized water. If there are two of you with different recipes, buy one stainless one and one green one.

The top of this Windsor-style pan is wider than the bottom. That makes it wonderful for boiling or cooking things that foam, such as dahl or milk.

This pot is good for making ghee. The bottom of the pot can be plunked into cold water to stop the ghee from cooking. Also, get the steamer top for making grains in the bottom and steamed veggies in the top. Double boiler top is an option, too.
