Every cook needs a non-stick pan, if only to make eggs and crepes. Unfortunately, no non-stick surface will last forever--and you shouldn't expect it to. The trick is to pick a quality pan that doesn't cost an arm and a leg.
Cook's Illustrated recommends this one. Despite my hatred of anodized aluminum, I love it too. It heats quickly and evenly, then holds the heat for good control.

Buy new: $15.29 This is THE pan. With proper seasoning, it gives teflon some serious competition. It can act as a fry pan when lidless and a sauté pan with its lid (sold separately). Stick it in the oven, and it even 'grills' a mean steak. It could happily be your only pan.
Cast irons heavy, so make sure it has a helper handle: these often need two hands to be carried safely.

To avoid total kitchen redundancy, opt for a 10 or 11 inch size over a 12 inch.

Buy new: $244.95 This pan can do everything a fry pan can...and then some. If budget is an issue, buy this before the fry pan.
Unlike the All-Clad version, Viking's handle is curved, which makes carrying a full pan a lot easier on the wrist.

Buy new: $120.00 Unlike traditional stovepipe shaped saucepans, sauciers taper in on a curve, which ensures a larger surface area for evaporation andmore importantly, a bottom without a sharp 90 degree angle, which makes it easier to stir evenly. (No stuck bits in the corners.)

Buy new: $149.95 A 2-quart and 3/3.5 quart reduction saucepan will do nicely. All-Clad also has a 1-quart size, should you want something smaller. Unfortunately, most companies outside the high end pans only offer a 1 quart or 3 quart size.
Viking's pans run slightly larger at 1.5, 2, and 3.5 qts. They are also a little more expensive

Buy new: $189.99 Next to the cast iron skillet, an enameled Dutch/French oven is the most multi-tasking piece in your kitchen arsenal. It can be used for soups and stews, of course, but can also double as a deep fryer or a small roasting pan. It's great for braising and can also bake certain cakes and breads. A 5 qt pot is the most versatile.
Unlike cheaper pots, Le Creusets have a lifetime warranty.

Buy new: $112.90 Stockpots have one primary purpose: holding and heating lots of liquid. Therefore, they don't need a lot of the 'engineering'. A stainless pot with a cladded disk bottom will heat thing nicely while avoiding scorching. Cladding on the sides, however, will help the large volume of liquid heat a little faster.
The 8 qt pot is large enough for most applications.

Buy new: $145.47 Stock pots are really only used to heat liquid, and this becomes more true the larger the pot is. Because you dont really need the multi-clad engineering for large pots, it is a little silly to pay the $300-some dollars for All-Clad/Viking/Demeyere.
However, the Cuisinart Multi-Clad line offers the engineering for a great price, so they are my stockpots of choice.

Buy new: $129.99 I'd been eying All-Clad's Roti Roaster for ages, but when I finally went to buy it, I discovered that it was not cladded steel and had a tendency to warp on the stovetop. (Amazon reviews of the Roti also reflect this trend.) This much less expensive Calphalon roaster performs better than the Roti, and just as good as Viking's offering.
Spend money on the pans you use every day, not a roaster.

Buy new: $45.46 I prefer using this instead of a broiler pan. Though this is much heavier than a broiler pan, it will never warp at high temperatures and makes a far better steak or hamburger. The griddle side also gives this piece extra versatility, and is great when you need to make pancakes for the multitudes.

Neither Lodge, Chefmate, or any other cast iron purveyor has Le Creuset's range of color choice.

Buy new: $295.00 All-Clad's Tall Stock Pot is their better small stock pot. The tall size gives the same amount of water a smaller surface area from which to escape, and keeps more of your stock in the pot rather than in the air.
This pot has the great traits of a good stockpot, but the $300 price tag is a bit steep for what is essentially a boiling vessel.

Buy new: $119.95 This is part of All-Clad's value line and is NOT cladded steel. Rather, it has an aluminum disk in the bottom. I would purchase this because you'll really just be boiling something in a 12-quart pot, and cladded steel or anodized aluminum in this size borders on overengineering. With the cladded Cuisinart option for just a few dollars more (on sale), however, I would buy the clad.

Buy new: $155.00 Demeyere has the same metal construction as Viking (in fact, Viking contracts out to Demeyre), but their pieces do not have riveted handles. This makes them easier to fully clean.
Their Atlantis line has the best handle design. However, their reduction pans are sold without lids, which cost $50-65 dollars more. The reduction pan is available in a 2.1, 2.6, and 3.5 qt sizes.
