Product Description

It began as a single knife, the Shu Ken Onion Chef's Knife. But our customers demanded more. So we've expanded the series to include include all of the most wanted styles. This Shun Knife by Kershaw is designed by Ken Onion, one of the worlds top knife designers. The Shun Ken Onion series features the clad VG-10 blade made famous in our Shun line. But then the handsome, stick-resistant blade is combined with Ken Onion's signature ergonomic handle design and the unique blade sweep found only in a Ken Onion knife. This patent pending design features a special angled curved bolster and specially shaped handle that fits perfectly in the hand, releasing all tension in your arm. The extra curve on the blade allows for an easier flowing motion across the cutting board. Combine all of this with the sharpest Japanese edge available, and you have perfection.

Editorial Reviews

Amazon.com Review
This 10-inch slicing knife combines Shun technology and a lusciously curved black handle by award-winning custom knife designer Ken Onion. Made of a hardwood-resin fusion known as Pakkawood, the handle is designed to be truly ergonomic in order to increase control and reduce fatigue during long stretches of use. The Damascus-style ripples on the upturned blade create air pockets that release food quickly, allowing clean, thin slicing of any roast meat. A bit daunting at first use, the large knife soon feels indispensable. Any chef would be honored to receive this gift-boxed beauty.

Shun knives, made in Japan by KAI (Kershaw Cutlery), are quite possibly the sharpest knives on the market. A Shun edge, formed to an acute 16-degree angle, won't bend or waver due to the hardness of the VG-10 steel core used in its construction. Clad with 32 layers of high-carbon stainless steel (16 on each side), the blade resists rusting and maintain its razor edge for a considerable time. Prized among chefs who value uniformly thin slices, a necessity in Japanese cuisine, Shun knives are covered by a lifetime warranty and should be washed and dried-carefully-by hand, then stored in a wooden block. --Ann Bieri

Customer Reviews

Obviously a man measured this knife...5
This knife is beautiful. Like all of the Shun Ken Onion knives it is well weighted and extremely sharp (straight from the box). However it is not 10-inches as the above title and description outlines. It is instead only 9-inches. This of course doesn't impact at all on its functionality; it's still incredible. But it begs the question of who measured it for this description... perhaps someone who likes to overestimate in other areas also...

Shun knife5
Wow this is a very sharp knife. It is also my first Shun. I own a set of Wusthof knives and they pale in comparason to the Shun. Can't wait to get the rest of the set.

the gold box deal got me5
O.K. This is a lot of money for a knife. And yes, I also have the cheap, test kitchen recommended victorinox version, as well. That being said, I was sucked in by the Gold Box deal and the knife is truely a work of art, in both form and function. Wickedly sharp as well as beautiful, it's unique curvature and stunning design make it a joy to use and a coveted kitchen piece when other people see it in use. Did I really need it? of course not. Am I pleased to have what I believe to be the best knife ever? you bet.
