Many excellent bakers prefer a cake pan without a fancy nonstick liner, knowing that traditional greasing and flouring provide enough coating for most recipes. This pan from Chicago Metallic provides everything you could want in such a pan: deep, perfectly straight sides, a thick rolled edge, and heavy-duty construction. With long-term use, the pan will darken, creating a need for slightly shorter baking times but enhancing the delicate crust of tender cakes. Both chocolate and white cakes bake up beautifully in this pan, rising evenly, developing a thin crust and good color, and releasing without breakage. The pan is dishwasher-safe, but hand washing is a breeze--when used with proper lining techniques, not much sticks to this pan. --Jill Lightner

Bake Perfect Cakes
Chicago Metallic Commericial bakeware is excellent. These 8-inch round cake pans are very heavyweight and give even baking results. I rub a bit of vegetable shortening on these pans and then line the bottom with a circle of waxed paper. One can dust some flour over the shortening, too. For an 8-inch layer cake, I like to divide the cake batter between three 8-inch round cake pans. Make sure they are staggered on the oven racks for the best baking results.
Best of the best
I have been using this pan for years, and they (I have three of them) still look like newly bought. Cakes bake in a breeze, without burning, or not browning enough. This is the best pan for cake baking I have found, and do not doubt to compare it favorably with any other much more expensive cake pan.
