Just about all of the text of this paperback originally appeared in a much larger reference/cookbook published almost ten years ago, The Craft of the Country Cook (LJ 2/15/88). In addition to produce from A to Z, that volume also included detailed entries and recipes for many other ingredients. However, ironically enough, this less-comprehensive book may attract a larger audience, since its thorough, readable coverage of all sorts of fruits and vegetables, as well as relevant cooking techniques, will be of interest to many gardeners and cooks and not just "country cooks." Despite the fact that this is misleadingly presented as a new work, it is recommended.
