Nice product, taller molds are more useful overall
A serious foodie that has been perfecting her cooking skills for the last 25 years in her home kitchen writes this review. My favorite cookbooks are "The Professional Chef" by the Culinary Institute of America and "Culinary Artistry". If you love to make your food as beautiful as it is tasty, you will enjoy this product.
I find these molds most useful for making risotto cakes, making short vegetable stacks, small frozen mousses or cutting rounds from cakes to serve as a bed. For items like stacks you can pack the mold and then slide the ring up to make a taller stack. However, this "stretching method" will not work for a taller frozen mousse. I imagine you could secure two molds together for a taller frozen mousse. But since I have not tried that I am uncertain as to how well it would work. The height restriction of 2 inches makes these molds a little less useful than my set of molds that are 5 inches tall.
This product is well made and should stand the test of time. If you don't already own a taller set of molds I would suggest that you consider that purchase first, I find them to be much more useful in my kitchen.
A great value, very well made
We love these aluminum rings! They are really nicely made --very smooth, one-piece aluminum, so not only is there no worry about rusting or welds to corrode or break, but they are naturally quite non-stick. We have been using them to poach eggs in, and we don't even need to butter them. They are very light, good looking, and a very versatile size. These feel like an amazing bargain at the $10 we paid for them.
I have tongs
Contrary to TrilliumB's experience, I find that eggs stick to these rings. However, since my griddle is a "stick" type, I just spray both it and them with a fine mist of olive oil. But, perhaps frying is different than poaching for stickiness.
I like the height, actually, because I use extra large eggs. I doubt that I will ever make mousse in them (as I have yet to ever make mousse anyway).
There is leakage out from under the rings because my 60 year old griddle ain't flat, but I just fold up the flaps on top when the cooking is over. I use tongs to hold onto the rings while I slide a pancake turner under. While still holding the ring with the tongs, I flip the works over---ring still intact. Then I take the ring off and put on a slice of cheese while side 2 cooks. Next, I plop the egg and cheese stack onto an English muffin and that's it.
I think of them as really tall egg rings. If you use extra large eggs like I do, I think that you will appreciate their height. As to whether food will stick to them, it appears that, so far, there is a 50/50 chance of that happening.
