For fluffy, evenly sized cheese shreds, this is the perfect grater. Its design is based on that of a rasp, the small and efficient woodworking tool. The cutters are especially sharp, which guarantees easy grating. But this also means you'll need to exercise extra caution--no one likes grated knuckles. The large handle allows for a firm grip, and the completely flat grating surface makes it easy to move the cheese across the blades. Carrots, onions, and medium to firm cheeses all worked beautifully with this grater. It's also an excellent choice for larger strips of citrus zest or ginger. --Jill Lightner

microplane grater/zester
It's high quality, extremely sharp. I love it. Just wish it had arrived sooner. I don't know how I cooked without it.
Attn Bakers: Can't live with out it!
Well, I've had this rasp for years now and it still performs like the day I got it. The zester is essential to all bakers (home cooks or pros). I previously owned the zester that had no handle, and purchased this one because I thought it would be easier to use (not that the other one was "difficult" but this one is definitely better in design). The handled one allows you to zest even near the end of the lemon with the curved part of the grater.
Lemons, oranges, and limes are what I use it for mostly. I used to use it for parmesan, but found that it was almost too fine of a grate, so I just purchased the medium ribbon grater by Microplane (skinny, long one too) and it's perfect for the job. Makes perfect shreds for all hard cheeses and is better for chocolate. But, LOVE them both. Makes me wonder what the heck people did before they marketed these things! anyway - great prices on Amazon for this as the specialty kitchen shops around town tend to mark these things up (horrendously!). Buy it, you will not regret it! It is one of my favorite kitchen gadgets of all time.
perfect tool for grating parmesan, zesting oranges
I like this better than every other grater I've owned or used. It's light, and very sharp, taking some of the physical effort out of grating! You probably can't use it to grate softer cheeses like cheddar or monterey jack, but it's very good for hard cheeses. The cheese gratings will be thinner than those obtained with a traditional cheese grater.
