I realized that this cookbook was actually completely perfect for this time of my life. No, I'm not living in a dorm with limited space and cooking utensils, but I am definitely short on time. (Gina Rothwell Vegan Strong 20090508)
I think the "spotlights" are great. They give a bunch of fun ideas to jazz up cheap ingredients. I know a lot of people that lived on ramen when we were in school! I bet they would have loved some healthier and tastier options. (Maggie Snyder Say Yes To Salad 20090510)
I think the book is perfect for college students (and I should know--I teach them!). (Vegan Dad )
I think this would be great for college students who are looking for healthy alternatives to crap college food. Lets face it, most college students have trouble making Ramen (no offense to some of you out there who CAN cook). I think this book has some great meal ideas that are quick, healthy, and VEGAN.
(Matt Tabor Run, Live and Enjoy 20090511)
I'm pretty anti-cookbook because I feel most recipes are way too complicated and expensive, but this cookbook certainly debunks that theory. In fact, most of the recipes have about 5 or less ingredients and every recipe looks super quick, super easy, and super cheap! (Ed Coffin Eating Consciously 20090508)
If you are a young college student looking to explore the vegan lifestyle, this book is a great resource because it provides easy, cheap and delicious ways to eat vegan without overwhelming you with information (Jenn Korducki Eating Bender 20090518)

This book will give you some insight and motivation to keeping your diet vegan while staying up late, being around party people, and by being under the gun of deadlines. (Jenn Blumberg Hello Veggie 20090511)
This is a great book for a younger crowd (HS to College) and I think PETA does a good job at making cooking (particularly Vegan and vegetarian cooking) a low-stress, fun activity.

Excerpt from Part One: What You Need to Know
In the Beginning, There Was the Microwave
You may be wondering why we didn't just make a vegan cookbook that requires a, you know, stove. Well, we know you're busy. After spending hours on end cramming Shakespeare into your head, we're positive that the last thing you want to do is stand in front of a hot stove stirring sauce or waiting for a pot of water to boil. And c'mon—a microwave is so much more accessible than a stove. Microwave in the student union or your dorm room? Check.Stovetop? Not so much.
Microwaved vegan food. Yum! Okay, we're not totally naïve here—we know this probably conjures up an image of a bowl of nuked, wilted kale or some other oh-so-healthy (but possibly gag-inducing) green food. However, at PETA we're all about breaking stereotypes, so we've created a cookbook dedicated to vegan food that doesn't require a stove and tastes delicious.
College is supposed to be the time in your life when you're really figuring out how to fend for yourself. You're already trying to figure out physics and how to get out of going to your 8 a.m., so who has time to learn how to flambé or frappé? Did you know you can actually make pasta without a pot or pancakes without a pan? Well, believe it, buddy. We can teach you all you need to know to make simple, effortless meals. You'll have plenty of time later on in life to make friends with your stove.
We're betting you've been there—nuking package after package of ramen. Opening the freezer with your fingers crossed, hoping there's a frozen burrito lurking behind the ice tray. Or gagging down some pizza, trying your hardest not to dwell on the fact that mold makes interesting shapes in a week—anything to put off actually spending time and effort cooking a meal. That's where we come in.
Why didn't we make a cookbook that's just like every other one out there? Because we love being the black sheep, the lone wolf, the creep in the back corner. Okay, maybe not that last one, but you get the idea.
We dare to be different, and we bet you are itchin' to do the same.
Heads Up
So we know you are old enough and smart enough to know how to work a microwave safely, but we still worry! Please humor us and keep the following in mind when using a microwave:
- Take extreme caution when removing containers of hot food and boiling water from the microwave to avoid spills and burns. Burns don't feel so hot. (Get it?)
- Although most plastic containers are microwave-safe, please double check before putting one in the microwave. When in doubt, use a container that is clearly marked "Microwave Safe" or "Microwaveable."
- Of course, no metal objects in the microwave! You know you don't want to be that guy—the person in your dorm or apartment that catches the only working microwave on fire.
Also, FYI, all of these recipes were tested in 700-watt microwaves and heated on the HIGH setting unless otherwise mentioned in the recipe. Cooking times may vary depending on altitude and microwave.
OK , that should cover all of the boring, lecture-y stuff. On to the fun part!

do you need a cookbook to tell you how to make grilled cheese?
If so then this is for you. I looked over this in the bookstore and the things that stood out to me were several pages on how to make a peanut butter and banana sandwich, how to make a vegan grilled cheese, and how to make "poor folks" cinnamon rolls (answer: white bread with margarine sugar and cinnamon). No thanks. other things in the cookbook may be more complicated (and...tastier?) but as a college student with no kitchen and only a blender to my name, I can be more creative and healthy than this on my own. also, faux meats and cheese are *expensive* for a college budget. (And get quickly lost in the dorm fridge)... better to spend on nutritional yeast which will perk up popcorn, pasta, and soups. Then again for a first-time vegan this is possibly adequate and I could be a food snob. In short, vegan food snobs, this is not the book for you. :)
Lame.
I made the mistake of pre-ordering this book before it even came out. I bought it expecting to find cheap and easy recipes practical for college students to make, because one time, I was at a show and peta was passing out little booklets with information on animal cruelty. Towards the end there was a recipe for vegan cake. It was so simple, and I never would've thought that cake could be made this way, but it was just a box of cake mix and a can of soda. You mix it together, throw it in the oven for however long it says on the box, and it turns out really well. That's the only way I make cake now. It's ten times healthier, easier, and better-tasting. I was extremely disappointed when this book arrived. Almost every recipe calls for some kind of vegan product you have to find at some specialty store (vegan cheese, vegan meat, tofu, soy milk, vegan chocolate, soy yogurt, soy ice cream, egg replacer, vegan butter, etc.) and I would really love to know what college student can afford that stuff. I've purchased some of these items before and I can say from experience that they're expensive and hard to find. This book is impractical and deceiving. All they did was take normal everyday recipes and substitute any animal products with the vegan version of them. The recipes I have made from the book are consistently bland and unappetizing. Creating recipes with fewer ingredients does not necessarily make them better or easier. And I didn't pay $15 to learn how to make salad or pb&j.
Well worth owning!
This is another PETA hit. Well worth owning. I am lonnng past college age, but got this for some quick ideas for weekends or nights there wasn't much time to cook. It is great for this.
It does use a lot of faux meats and cheeses as you might expect. There are recipes without these though.
The recipes I've tried so far were hits - not just with myself but the family and I'm going to try to upload a photo of the peanut butter cup pie from p.87. OH MAN. You can sell this stuff by the slice an make a fortune. It's UBER GOOD!!!
If you are in college and vegan or if you just want some really, really quick and easy TASTY meals - this is the book to get. Honestly, I wish I could afford to by several hundred to hand out on our local college campus. Great food - fast and all you need is a microwave and a blender. There is no reason you can't be vegan! :)
