Sourdough: 1 cup water + 1 cup King Arthur's BREAD flour. Let it sit out, stir every day, every 3 days discard half and add 1/2c water + 1/2c flour + 1tbsp sugar.
When it starts bubbling, you can refrigerate it and tend to it every 3-4 days. Double it and let sit for 8 hours then use 2 cups in place of yeast and regenerate from what's left.
