I received The Encylopedia as a Christmas gift from Paul in 2006. My only complaint is that it is so big I get tired carrying it around. I love it! Chef John Folse has autographed it for me. For Louisiana cooking and culture, get this book! Even if you never cook, this is an elegant book with lovely pictures, a must for a coffee table.
