About the Author
Robert C. Atkins, M.D., was the founder and medical chair of the Atkins Center for Complementary Medicine in New York City. In his more than 40 years of practice, he cared for more than 65,000 patients.

Atkins Has Become Mainstream
In the seven years since this book was first published, many things have happened. Dr. Atkins, who pioneered the controlled carbohydrate lifestyle, died after a fall in April 2003. But his legacy lives on, growing stronger every day. At the time of his death, Dr. Atkins was finally beginning to see validation of his approach to weight control and overall good health appear in numerous research studies published in prestigious medical journals. In the months that followed, a flood of equally supportive studies has continued to appear -- and be reported in the popular press -- confirming the efficacy and safety of doing Atkins.
After more than thirty-five years of being considered controversial, the Atkins Nutritional Approach™ is moving into its rightful place in the mainstream. The last quarter of the twentieth century was dominated by the low-fat/low-calorie dietary culture -- during which, not coincidentally, rates of overweight and obesity ballooned, along with an attendant rise in the incidence of Type 2 diabetes. Net Carbs are basically the grams of carbs that remain after you subtract the grams of fiber from the total carb count. Although fiber is a form of carbohydrate, it does not impact your blood glucose level the way sugar and most other carbohydrates do. Net Carbs are the only carbs that do affect blood sugar and the only ones you need to count when you do Atkins.
Finally, recipes are now coded to indicate the phases of Atkins for which they are suitable: Induction, Ongoing Weight Loss (OWL), Pre-Maintenance, and Lifetime Maintenance. In general, recipes that are appropriate for Induction contain no more than seven grams of Net Carbs per serving and do not contain fruit, fresh cheese, pasta, grains, starchy vegetables, nuts and seeds or their butters, or legumes. Those recipes that are suitable during OWL contain no more than 10 grams of Net Carbs and can include all cheeses, certain fruits, low carb pasta, and nuts and seeds and their butters. Recipes marked for Pre-Maintenance and Lifetime Maintenance may include previously restricted ingredients.

This is what Atkins dieters have been looking for!
Easy-read, simple recipes. Short ingredient lists. A cookbook that's clearly organized into short chapters according to meat type. This is what I should have had when I started the Atkins' Diet last year.
Unlike its predecessor, Dr. Atkins' New Diet Cookbook, this Quick & Easy Diet Cookbook is very handy. It's just the thing after a long day when you don't want to get into an elaborate cooking session. I can pull some meat out of the fridge and look up a recipe; chances are, I will have everything I need stocked in my low-carb pantry and fridge. Most of the main dish recipes take under one half hour to prep and finish, and the ones I've tried are all taste-satisfying winners.
There is a beginning chapter that explains how to trim the carb content down if you're in the early Induction phase of the diet. Mostly, though, the meals are all low-carb enough for the Ongoing Weight Loss and Maintenance phases. I think dieters who are into other low carb diets will find it useful, too. There is no guesswork about how many carbs per serving when you measure your ingredients correctly and consult the carb, calorie, etc. counts at the bottom of the page.
Finally, I want to thank the team that finished this book after the Doctor's tragic accident last year. It's great that his "estate" is carrying on his good work to help this country and many more around the world learn how to get healthy and stay that way. Thank you all, and may God bless.

A MUST HAVE FOR THOSE ON ATKINS OR OTHER LOW CARB DIETS!
I've been following the Atkins diet for a short time and decided to buy this to save time preparing meals. This is just a great help in following the Atkins way of eating. The recipes truly are "quick and easy" and delicious. Another plus is that the book isn't overmelmingly long (not one of those "1,000 mouth watering recipes")! There are several recipes for each section (ie; beef, poultry, appetizers, seafood, desserts, etc.) - just enough to give you varied menu ideas but not overwelm you with decisions.
This is good eating even for those who are not dieting.
Not quick and easy
First let me say that I absolutely love the Atkins Diet, I lost 60 pounds in 3 months but I dont think this book is quick in easy. Some of the recipes call for ATKINS products which have been discontinued such as Atkins quick and easy bake mix. I tried to find these products by going th the Atkins website but everything except the bars and shakes have been discontinued. Also a lot of the recipes call for uncommon ingredients so unless you have the money to go out an buy all these ingredients dont by this book. I recommend that South Beach Quck and Easy cookbook because the diets are similar especially the first phase and these recipes are much easier.
